Threw this one together over the weekend after wife bought some Pomegranate Liqueur for some specialty cocktail:

2 parts Pomegranate Liqueur
1 part scotch (I'm guessing cognac would be better, but I didn't have any handy)
1 part Triple Sec
1 part Balsamic Vinegar

I soaked two sets of Spoonbill breasts in this for about an hour, then grilled over hot charcoal to Rare/Med Rare. I was blown away by the residual flavor of the boozes. There was one shot channel that seemed to have collected a bit of scotch directly, but other than that, the flavor imparted was a complex fruit flavor which proved rich and left the breasts with an excellent texture and mouth feel.

Paired with a Claret and served with fresh cut green beans.
