Sorta duck related: aging meat

I shot a deer today not sure how long I can let it hang before I butcher it. I usually butcher the next day, but a friend letting the deer hang for a week. Temps here in KC will be in the 40's during the day and 20's at night, so I don't think there is much worry about the meat spoiling.

I have also seen several posts where guys age ducks before they clean them, how common is that??
 
I wipe mine down with vinegar and water, dry them bag them and in that weather a week shoudl work. I go smell mine everyday and check it over. A little mold is Ok too. I know some guys are picky about ageing but Ive been doign it like that for a long time and have had no bad meat, ever.
