My new favorite way to eat duck.

Wow is that good. I added two seeded Jalepenos to the veggie mix and 2 Tbls. of Tony C's seasoning and increase the bread crumbs to 1 cup and the bacon to 16 oz (bacon ends from the butcher are cheaper). Gives the meatballs just enough kick to know it's there without being overpowering. Made a pan gravy to go with them. Made just about 80 golf ball size meatballs.

I used breasts from: 2 cans, 2-3 (can't remember) mallards, a GE and a Blue Bill to make up the 3 lbs.

Most definately make this if you get a chance.
 
Glad you tried it and glad it was reproducible... I did it again at duck camp last week, and they didn't last long...

This weekend I tried yet another one that I had been thinking about.

It is a combination of southern style "chicken fried" duck and an orange sauce.

In a sauce pot take a jar of orange marmalade, same volume of orange juice, 1 cup of dark brown sugar, dash of cinnamon, dash of cardamom powder, pinch of kosher salt, and dash of cayenne pepper. Set this on low and simmer; reduce to half. Strain back into pot and keep warm.

Take 4 or 6 duck breast halves. Butterfly them and then cover with plastic wrap and pound with a smooth tenderizing hammer until they are about 3/8" thick uniform.

Take two bowls and break up 4 - 6 eggs and beat well. Second bowl, make a breading of flour (~3 cups) and 1 cup of fresh cracked pepper (I like LOTS of pepper in this). Mix well with a fork until pepper is dispersed in the flour.

Get a large cast iron skillet on medium high heat with olive oil. Dip pounded duck in egg and then flour, and into pan. About two minutes on each side, until both sides are browned. Pull and place on platter. When all of your duck breasts are done, deglaze the pan with Cointreau, and stir up all the yum yums. BEWARE if you are using gas, pull the pan from the flame and pour the liquor. This will flame. If electric, no worries. Add your marmalade mix and reduce in the pan.

Pour sauce over the fried breast, and serve.

This is neat because as the sauce cools it becomes candy sweet.

I had an office party this weekend, and people who don't eat wild game LOVED this duck dish! Now, if you don't like super sweet dishes, this won't be for you. Go with a savory type dish.

I can also attest to the goodness of the duck meatball. Had some with Steve at duck camp the other day. Good and healthy indeed. Put a pinch of Lipitor in mine!!
 
Steve, hows the whistlers coming, still warm here, a few ducks showed up the day after the seaon closed. the worst duck season I have ever seen, the good news is that their will be lots of ducks heading south once it gets cold.

Another thanks on the bacon and duck meatball recipe. Prepared a batch to serve during the SEC championship game a couple of weekends ago and they did not last long. Like Pete I added extra bread crumbs and more Tony's.

Prepared a Horseradish sauce and a hot chilli sauce w/ grape jelly for dippin, both were good on with the meatballs.

The "fried duck" recipe sounds good too. Will definately give that one a try.
