Does anyone know why most dove meat is dark red but a small percentage of them are very light colored to the point of almost looking like chicken?

I should be able to get a good supply of Pintail, Wigeon, and GW teal feathers for any fly tiers. Should also be some Canvasbacks, Cinnamon Teal, Woodies, and Spoons. I'd be happy to save them and ship them to you, would just like a few tied flies to come back this way.
