* 4 duck breasts, no skin
* 1 Red bell pepper or green pepper works too
* Bunch of Green Onion or slice Vadalia Sweet Onion
* Sliced Portobello mushrooms
* Slab of bacon
* Round toothpicks
Marinade...
* Apricot preserves * 1 splash of Whiskey
* plenty of black pepper...
* a little splash of oil (olive oil preferred. )
1) Cut duck breast into 1 inch strips. Mix all marinade ingredients and marinate at least
2 hours.
2) Remove duck strips from marinade and prepare 2 wraps...
one... 1 breast strip, 1 portobello, wrap with bacon and skew with toothpick.
two... 1 breast strip, 1 pepper strip, 1 onion wrap with bacon and skew with toothpick.
Can also substitute just teriyaki for the marinade. Can also use goose instead of duck.
Cook on grill for about 15-20 minutes. Do not over cook. Duck and goose are better if
a little rare rather than overcooked.
