4 Scaup...

Looks good. Tell me about what you have here - strip of pepper, strip of onion, scaup and then wrapped in bacon?

Game Warden Duck Wraps​
* 4 duck breasts, no skin​
* 1 Red bell pepper or green pepper works too​
* Bunch of Green Onion or slice Vadalia Sweet Onion​
* Sliced Portobello mushrooms​
* Slab of bacon​
* Round toothpicks​
Marinade...​
* Apricot preserves * 1 splash of Whiskey​
* plenty of black pepper...​
* a little splash of oil (olive oil preferred. )​
1) Cut duck breast into 1 inch strips. Mix all marinade ingredients and marinate at least​
2 hours.​
2) Remove duck strips from marinade and prepare 2 wraps...​
one... 1 breast strip, 1 portobello, wrap with bacon and skew with toothpick.​
two... 1 breast strip, 1 pepper strip, 1 onion wrap with bacon and skew with toothpick.​
Can also substitute just teriyaki for the marinade. Can also use goose instead of duck.​
Cook on grill for about 15-20 minutes. Do not over cook. Duck and goose are better if​
a little rare rather than overcooked.

Roy - Like this, it is good eating. This recipe is outstanding with everything including goose. Not sure about mergansers and sea ducks as I've never tried it. I have tried it with all puddle ducks and divers. Enjoy!
