A duck recipe I will share...

Was reading the thread about cooking thermometers and couldn't agree more.

It also got me thinking I need to share a little more.

Here is a recipe that I live by. I have never served this meal where any meat was left. I have had vegetarians ask for more... No one has ever passed on seconds. It is a hit!

Cut the duck into strips like this...

Marinate overnight or up to two nights in a mixture of vodka and orange marmalade (peach preserves also work). Make sure the meat is all completely covered.

After they are soaked, pull them out and let them sit on a towel at room temp for an hour or two while u cut the vegetables and bacon.

Cut green onion into strips, bell peppers of various colors, and strips of bacon.

You will also need some toothpicks...

U will make mini kabobs with duck strip in center.. Then green onion on either side.. Followed by bell pepper on either side. The whole kabob is wrapped in bacon.

Grill them till the bacon is cooked... Absolutely amazingly tender and phenomenal taste. Hope you guys give this a try sometime u will love it!

Jon looks good. have you ever tried with divers or mergs?

i still have some left from a late january hunt and some of my friends don't have acquired tastes so this might be the ticket.
 
Never tried with divers/mergs... But I do have a go to recipe for them.

Very simple...

Cut in strips like above.

Soak in fresh water for two nights.. Change water after night 1.

Dry strips thoroughly and coat in a wet beer batter (I use pride of the west)

Deep fry in peanut oil. Not too long b/c u want the meat to still be on the rare side.

Eat fried duck strips plain or dipped in sauce of your liking. I simply sprinkle hot sauce on them (tapatio/Tabasco) and eat on the spot. U can use whatever u like!
 
Very similar to my duck fingers recipe. They are even better the next day as a snack in the blind.
 
Sounds good. Alcohol is a good marinate. I do something similar with a flavored brandy. BlackBerry or cherry. For those that don't like alcohol don't worry because alcohol cooks off leaving flavor behind.
