Broken Bolt Extractors?

To be clear, part of the bolt, a narrow crescent of it, is still in there. I did my best to center the drill bit but at some point it went slightly off center. I stopped drilling so I would completely destroy all the threads on the thin side and then used to tap to make it where I could get a bolt to go in smoothly. It’s a hair off center but I can make it work.
It’s too damn hot to work on it any more for a while, but im considering whether to just slightly bump out the hole on the cavitation plate so the holes line up and run with it or drill it out and re-tap for 3/8”.

You are going to have to use your best judgment on the tools and skills you have, and the amount of material available around the original hole location.
If I were doing the repair. I would attempt to remove what is left of the bolt. Yes you will be left with an oblong out of round oversize cavity. The center of that cavity will be closer to the original center than what you have now. I would then drill and tap, for a thread insert. This will result in the same size bolt as original with full profile threads to accept the new bolt.
Helicoil inserts are the smallest OD but only work with slightly oversize holes (example .266 hole for a 1/4-20 thread)
Full body inserts will fill a bigger cavity.
Options; example is for internal 1/4-20 threads
Be sure to choose a stainless steel insert.
