Campfire style ribs.

Did some cave man style sheep and caribou ribs up over Thanksgiving. Just a bit of salt and pepper and cook them as slow as possible next to a fire of alders and poplar. If you use pine or spruce it makes black pitchy smoke that smells like ashtray.

If you don't have hickory then alder is the next best thing. Mmmmm they look scrumpdillicious.

Man that looks good. I have done that with beef ribs but never wild game. I will have to give it a shot.

Hey Mike, I've been enjoying your culinary posts (well, except for the gravlax buffie). I love the shot and my mouth is watering for those ribs. After we talked I was all keyed up to try ribs like you suggested from the caribou in the bush, but with the turn of the weather, just couldn't make it happen (next time, I guess). I stripped the ribs and cooked them after we got out of the bush and they were great braised.

But the sausages and everything looked/sounded great, etc... yum.
