Without stealing the author's thunder, I just want to say I made Ganseklein from Hank Shaw's "Duck, Duck, Goose." With the potato dumplings it tastes like a stuffing soup. That is; like thanksgiving bread stuffing in soup form.

Highly recommend the book if you want regular ole recipes, or you are a true scavenger and want to eat everything but the beak.
