Long Island Opening Week/Cooking Brant

Thank you all for these ideas. I will give them a try as the season progresses, but at least you all have given me hope the these birds can in fact be eaten without having to plug your nose and chasing it down with a hard liquor.

I can tell you what not do do in one respect. Years ago when a good friend and myself were shooting Brant regularly I decided to freeze one for an upcoming taxidermistry class I would be taking after season ended. When I thawed that bird out for class and cutting into it there I was quite suprised. Have you ever tried to do taxidermistry while wearing a respirator! Stinking is putting it mildly...
 
Just to be clear to anyone who reads this and doesn?t know, this discussion is about Atlantic Brant. Black Brant on the Pacific Coast still eat eelgrass and are great table fare.
