More uses than just floor stain...

Been working on some turkey related projects.

Breasts rolled and tied for sous vide and nuggets below made from the trim. Breasts will get fresh herbs, garlic, butter and salt added and then vac sealed for the freezer.

Well, it is 9 in the morning and now I want any of those dinners (except the oysters)....but I always did prefer dinner for breakfast.

Beaver sure looks like he enjoys cruising in the boat. He is looking good.
 
Thanks Dani, Here are a couple pics as proof ;). Youth season was good to Gus, he took a nice double of two great birds before school one day last week (my season opens Wednesday).

Nice long spurs and heavy - solid 1.25 inch spurs for both birds and 23.25 and 23.75 pounds. Oh boy, I'd be happy with either, but as a double! Wow.

Unbelievably the limit is 5. The Bio is pretty convinced that hunting is not a significant cause of mortality. It concerns me a little, especially on state land. Our limit used to be 3 private and 2 on state land, and then last year they combined the 2 limits. Ct only harvests about 1500 gobblers in the spring, but I think hunting must be able to have a local impact if people take 5 year after year. I doubt I'll ever try to get 5 from the places we hunt, maybe 5 between Gus and I (we got 4 last year).
 
WOW. 5 birds a season seems incredible. I have been reading on a turkey page that there are discussions of reducing the numbers of birds in the south (I think GA is going from a season limit of 3 to 2 and you can't harvest but one a day (public or private property). I think AL is also considering lowering the limit for next season. Here in FL on public property you can't kill 2 a day but private property that is okay. The season limit is 2 birds though.

5 birds is mind boggling to me.

Yes, with the declines in the eastern turkey the trend on limits is downward all over the east. In theory you could shoot your 5 in one day here. I've had days when I could have done it in the past, but some of the birds (most) would have been jakes. I like the ability to double up, growing up in NY, there was a 2 bird limit with only 1 per day - that saves a lot of birds. I used to not double up taking the high road, but I shoot a lot more birds when I do - and I like eating turkey :).
 
Just got things finished up.

Sausage formed yesterday and put in the freezer so it wouldn't be crushed in the vacuum sealer.

That sausage looks good. Very professionally packaged. Nice photos, you and your family are living the dream, as usual.
 
Have you ever been able to get wild turkey legs and thighs to convert into anything not too tough to eat? Did you airfry thos turkey nuggets? Steve cooked some for five hours sous vide and brought then to duck camp last fall along with a bunch of pheasant legs and thighs. I combined the turkey with the stock from slow simmering the pheasant legs and then added some dried oyster mushrooms after simmering this for about three hours with some spices, Heated it up the following night and discovered it was a waste of good oyster mushrooms. We use fresh sage in any recipe that calls for lemon zest since it adds that sharper fresh flavor with some tanginess like citrus.

Beyond egg predators and coyotes, you likely don't have that many top predators or high winter severity levels to markedly impact turkey survivorship..
 
My approach to wild turkey legs & thighs was always to put them in big slow cooker with a couple of cans of cream of mushroom soup, a can of chicken broth and leave them cook all day while at work.
 
That stock looks excellent. I have considered canning just so I can keep stock in my pantry vs my freezer.

Turkey legs I mostly turn into soup and it is really good that way. I like the thighs on the grill, though I usually add them to the legs to make soup or stock. I smoked a wild turkey once and the thighs were quite tasty but the legs were very tough (not surprising).
