anyone have and links or expieriance or advice on how too make summer sausage and pepperoni? im looking for somthing that can stuff the sausages reasonably priced for the most part as thats what has me stuck thanks
 
I do about 400 pounds of different venison sausages a year and I will tell you there is a lot of equipment out there. Some grinders you can get kits to stuff the sausage right out of grinder. I personally use and old lard press. I would suggest a small vertical stuffer like a lard press, Gandar Mountain, Cabeleas and othere stores all sell them. You could also get a horn stuffer, but they leak a lot of meat and it can get old quick.

I buy all my spices at P&S Seasonings in Iron Ridge WI go to http://www.psseasoning.com to see their line up. You should be able to find a 5# vertical sausage stuffer for around $100 new.

How big diameter are you making? When I was making Venison summer sausage, the casings were about 2" in diameter and I just spooned it in and packed it. Cabelas used to have sausage stuffers in the catalog and sometimes you can find them at garage sales. I bet there is a hundred on ebay.

It is the real deal.
You will be fine with a hand grinder to start out. If you get a little help you can move a lot of meat without too much work. Freeze it up and enjoy all year long.
We make 25 pound batches for our game dinner and other outdoor cooking events.
I saw the online tutorials that might help you too at the same site.
 
I like http://www.eldonsausage.com/ for my supplies you can buy kits. I bought a hand stuffer off of ebay for under $20 shipped a couple years ago. Luckily my cheapo Nesco grinder came with sausage stuffing nozzels on it. It is fun to make and much more cheap once you have the stuff to make gourmet sausages. Andouille, Boudan, Italian, Chorizo, Brat and a multitude of others.
 
thanks for the help guys i tried the google search method and got overwhelmed thanks now i got first hand reccomendations and places too read
