I think a big part of the safety aspect is what was mentioned earlier in the thread, and that is to tighten up the steering resistance on the outboard so it isn't super sensitive.
I stand when I run, but when it is rough I'll kneel down at the front of the cockpit on my Fricke box and duck behind the canvas.
