    Those look really great!! I've been making fresh sausage for a few years and hope to get going with fermented stuff this spring. I converted a small fridge into a chamber and it seems to be stable during the "dry runs". Tom

    I use a couple of gunning bags. Painted canvas Klein Tool bags, 14" and 16". I made a mahogany liner for the 16" with a sliding partial lid and section for shells to keep it organized. Tom
