10 Ways to Eat Sea Ducks

Hey Gang,

While many of you visit Hank Shaw's web site for culinary inspiration as I do, I am sure there are quite a few who have never had the pleasure. I have made a lot of Hank's recipes for a variety of game and never had a failure, in fact many times I will hear "This is the best thing you have ever made". Some recipes are a bit involved but not beyond the average cook's skill level.

This just came in my email this morning and thought that this is the best place to share it. These are all new recipes to me so I will be anxious to try them too.

Here's one that we recently tried that was OUTSTANDING


1 c Dales marinade
1/2 c orange juice
3 Tbsp apple cider vinegar
2Tbsp crushed garlic
2-3 chopped jalepenos
Use as a marinade....wrap duck breasts in thin bacon and grill.....FREAKING DEEEELICIOUS
 
I believe it Dani, Dale's goes with everything. Before it was available up here I used to order a case at a time and give it out as gifts. I think that was back in the late '80's or early '90's. That recipe sounds great, I'll try it.
 
I was invited to go sea ducking over thanksgiving and we had a couple great hunts, I even got to hunt out of a bankes boat.

I'm having a massive party this Sunday and I'm having a big batch of scoter chili for one of the courses. I have already gotten compliments on it.

The rest of the menu is as follows:
Squirrel and homegrown cabbage egg rolls
Blue crab dip
Blackfish sushi(I make both a big roll and spicy blackfish roll)
Wild mushroom ravioli bake with homemade/homegrown sauce
Blackfish pie
Oyster gumbo
Plus other stuff

And my first kegged batch of home brew!!!!
 
Last night was:

Venison Wellington with wild mushroom duxelles
Wild mushroom and homegrown Swiss chard salad
And homemade apple wine

Did I mention I enjoy cooking?

I was thinking about having a monster duckboats.net party eventually.....

May have to try some of these. I'm sure that sea duck really tests you palate as Brant does but I don't shoot them because i don't/won't eat them

Thanks for sharing Hank's website. Although, I probably will not likely eat any sea ducks anytime soon Hank's cookbooks look good. I have them saved to my amazon wish list just in case my family needs any Christmas present ideas.

Thanks for sharing! Those recipes look great! I had a great fortune to take cooking class with Hank last May in south Texas. The class was sausage making and we used wild boar. Hank's knowledge of cooking and ingredients is absolutely amazing. Plus, he is a helluva nice guy. If you ever get a chance to meet him, do it!

Personally I feel like the scoters (sea ducks) eat better than many of the diver ducks (ringers, blue bills, etc.) Thanks for the link and information. Some great ideas and recipes for any time of meat.
