don't worry Chuck i love duckboats

i found this awsome blog/website while looking for new recipes. it is really informative about everything. since i am always outside and try to eat everything i find whether it be acorns, hickory nuts, wild mushrooms, crabs, fish, birds, mammals from the hunt or from a trap this site was perfect. when i was a kid (i still do this, i never want to grow up) i tried to live off of the land, finding my own food, these were good times and my palate was very thankfull because i enjoy many things that our cheeseburger nation looks down upon.

the weirdest thing i ever ate was jack-in-the-pulpit root, if you dont dry it or boil it it feels like you are eating fiberglass but it also has an interesting taste and texture.

I want to know how you did the acorns? I heard you have to boil them and change the water several times to get the tannin out of them...

I wonder if you can use black oak, or white oak or either?

Let me know, because my mom has some black oaks that let loose each fall with about
a garbage can full of acorns and it would be nice to feed more than the squirrels with them.
 
i have only roasted acorns once, they were very bitter but i have been wanting to try them again(i really want to make acorn flour), with hurricane this year and it being the year after a mast year here in ct there are absolutly no acorns here.

but i have roasted black walnuts for a smoked goose salad with a vinegarette and blue cheese that was amazing.
hickories if you can pick out the ripe ones are very sweet right out of the shells, just becarefull getting the meat out, my buddy lost the tip of his finger trying to open them with hedge clippers (stupid is as stupid does)

i want to start rendering duck fat for year round stores, my plan is to freeze the fat in an ice cube tray, then transfer the cubes to a bag so it is easy to measure every time i want to use it.

i also want to try my hand at the various sausage recipes i have been making venison sausages since i was ten but i have never tried duck

He was in Cleveland back in October. I had it in my Outlook calendar to go but had something come up that took precedence. Really wish I could have made it.
