Have ever seen. If he puts up some of his plucked pictures you will see what I mean. I don't remember how he gets the final finish but it is Perdue quality. Maybe he will give a demo.
I like a roasted bird and have not had trouble cooking them. Slow roast a plucked and cleaned bird with oil on skin, orange slices and tyme inside and salt and pepper all over at 350. Make a sauce with currant jelly and orange or lemmon and a shot of vodka from pan drippings. Um Um good.
Divers and shot up birds get breasted and legged. Pan roasted duck breast is awesome too with the crispy skin.

I will occasionally on bigger ducks just push the leg up and in side so I can get at the joint, snap that and then take a game shear to the leg bone and have some drummies. My boy loves those. Hot skillet, oil, breadcrumbs and MEDIUM RARE....good eats.
 
The funny thing is the law in AR is no different than any other state in the country. The state has just chosen to interpret and inforce the law differently. My guess is it's just another ticket to add to the list when writing up a violator.
 
i hear ya mark. i know when i've been stopped, i always get the "be glad i'm not writing you a ticket for...." and rattles off something that isn't in the reg book. when i say "how could i get a ticket for something that isn't in the reg book"... he says "I guarantee you i can find it in "my" reg book i have in the truck." they are their own entity. down here you better not even show up in court if you try to contest a ticket. i was told by the old agfc head himself.. "don't even take it to court.. you'll come out with more fines and tickets"

A lot of good points have been made. All I have to add is that I breast out 95% of my ducks for making "Duck Poppers". I will on occasion clean pluck larger ducks like mallards for raosting.

Duck legs always over-cook when roasting so one way I've solved this is by cutting them off, saving them until I get enough to cook up and serve separatly.

A couple things I do is DRAW the birds after shooting, leave them fully feathered on the way home incase I'm stopped by a game warden and after I get home (if the weather is cold enough) I hang them for 3-6 dats to age just like they did back in the Market Days. This makes the meat more tender.

Probably the most important thing to remember is to NOT over cook waterfowl. Roasted wild duck and goose are ruined by over cooking. Wild birds just don't have the fat on them like domestic birds do and even with a lot of basting it is hard to get wild waterfow cooked correctly.

IMO rae or medium rare is the only way to eat wild waterfow if you want maximum taste and tenderness from your birds. When birds are cooked until the meat is GRAY is a sin around my house. Treat waterfowl meat like beef tenderloin and you can't go wrong.

That is one of the reasons I don't hunt Arkansas anymore. Had a club member get a ticket and be embarrassed
in front of his 10 year old son for having duck breast in a marinade in the frig at the camp. They just invited themselves in the house and looked inside. Just BS in my opinion.
