If I was looking to do what you want, I would look for a good locally made Garvey. You want something heavy with a shallow draft for being on the big bays(I am assuming you are hunting/fishing Barnegat Bay or the vicinity). For the summer, you will find a Carolina skiff to be pretty bouncy if you are fishing the bay from all of the boat traffic, although I do think it is a good boat, and for duck hunting, you want something that will plow through a nasty wind and get you home. There is a reason that the Garvey became very popular in NJ, and that is because of the performance in typical Jersey bay conditions and the safety it affords you, and I also think it would be drier. But either one is a good choice and will work fine.

The Lund Alaskan is an extremely popular boat in Maine's waters, at least for sea duck hunting. Perhaps its v-hull is unsuitable for your needs, but it surely fills the bill up there. My Lund is 30+ years old, and has not the first leak anywhere and has been used and abused mightily for all those years.

There's a Chincoteague Scow on Craig's List South Jersey - Just posted today. You might be interested in something like that.
I have a G3 1548 john 100 gauge aluminum, heavy boat, and the wind still blows the bow around when I sit in the transom. I don't believe there is a universal gun or boat.
