I hear the Pacific are good to eat. Has anyone tried marinating the Atlantics in coffee? It is supposed to remove the wild taste out of the meat....then you can marinate it in whatever else you want. I have a buddy that soaks his geese in coffee overnight...then butterflies the breast only, coats the inside with some apricot preserves and a layer of spicy sausage, pins it with toothpicks, and bakes at 350 till done. Someone that has any in the freezer should try it and let us know if it is worth eating or you just wasted a pound of hot sausage.
