Sounds like a good "game" plan. I've had good luck with the A.C. Leggs pre-mixed seasonings for a nice breakfast sausage mix and smoked summer sausage. All spoonies, snow geese and a few skinny specks go into the sausage mix with 15% pork fat.
Please let me know how that golden eye turns out!!!
 
I'll took a look at the AC leggs and will give it a shot. I had the goldeneye for lunch today, it was delicious, I did the soak in salt water and Lawry's seasoned salt, some onion powder, changed out the water twice until it stayed clear. I had it all cut up into finger steaks and dipped them in egg and then flour with Lawry's again and fried them in bacon grease, but had to add some olive oil. Probably key is to not overcook as with any duck. Not a hint of gamey taste. Heck it might even make mallard taste good.
