Duck Curry

Came up with this recipe this weekend, dang it was good:

~1 lb of duck breasts, cut up into bite size chunks
(I used 2 buffies, 3 teal, 2 coots and 1 hairy headed mergie! Could not tell the difference between them)
1 small onion, chopped
3 cloves of garlic, diced
2 carrots, diced
1 green pepper, diced
2 medium potatoes, diced
2 tablespoons curry powder
2 tablespoons brown sugar
bacon grease
2 cups chicken stock
1/4-1/2 cup wine

Brown duck breast in bacon grease, place in crock pot.
Brown onions in bacon grease, add to crock pot.
De-glaze pan with wine & add to crock pot.
Add 2 cups chicken broth, curry powder and brown sugar to crock pot, stir well.
Turn crock pot on low & cook for 4-6 hours.
Add carrots, green pepper and potato, cook on low for additional 2 hours.
Serve over rice.
Add red pepper if you like your curry spicy!
 
Looks good Carl, I'm going to try it. It amazed me when I first tried it how good curry was with duck.

I have been making a pocket in the breast, dusting the inside with curry and then stuff with blue cheese. Both the curry and the blue cheese are strong so they seem to go together. Truss or tie, Dust with seasoned flour and pan fry until brown, finish in the oven in the same pan - 8 min @ 325.
 
Looks good Carl. i will give it a try. Can't get my family to eat the McMiller goldeneye gumbo, and needed a new recipe.
 
WHAT? They don't like my gumbo? How could they not?

Wait a minute, I get it, you never gave them any. You saved it all for yourself :)

I just took out of the freezer.

Hey Carl,
I tried your recipe tonight for dinner and it was really good!
Cooked up a few buffy, a snow goose and 2 brant. We could still distinguish the birds, but they were all good.
I substituted Panang Curry paste for the powder, which made it quite hot. I like spicy curry anyway. Have had fish head curry before in Asia, so the brant didn't scare me too much....Ha!
I may have to change my tag line to : " there's a place for all god's creatures - right next to the potatoes and curry"

ABout the only aphrodisiac I know of is, well, let me think, uh.... Well, if anyone knows an answer to that, let us know!

Have you tried the Japanese Curry paste? S&B brand I think, comes in a little box, Walmart carries it. Ranges from mild & sweet to burn your lips off. We make it quite bit in the winter.
