Just thought I'd say thanks again to those with the goose recipes. I managed to over cook the jerky but my wife being the great cook she is re-hydrate and it couldn't be better. The full breast smoked perfectly. I must say I will never do goose in the oven or in the skillet again.

Best thing is to keep trying different recipes and techniques. You can always eat your mistakes and try again!
