I wish I could get a turkey to read the rulebook of what they're SUPPOSED to do. It happens for me maybe once every.....oooooohhhhh?..five years or so. Otherwise, they are just sneaky bastards.

for the sous-vide do you have a machine that keeps the water at the right temperature? Or did you make your own? The turkey breast looked delicious.

We have a purchased one. ANOVA and Joule are the big names, we have an ANOVA since the joule requires a bluetooth connection to it to set the temp and that is just too much for a kitchen gadget. The ANOVA can use bluetooth, but doesn't need it. Try it with the cooler method to see the results (hot water in cooler to bring it to temp and then use a kettle to maintain the temp every half hour or so). Sous vide is where it is at. We use it every single time we would have a piece of meat (turkey, duck, venison) that was appropriate to be grilled or seared in a pan.

I've had great grilled turkey and it doesn't hold a candle to sous vide turkey, same with venison, same with duck, or even a beef steak (but a steak can be pretty amazing just grilled). We are using it as a first step to tenderize and then flash sear or grill for color and flavor.
