Tried new duck recipe

I'm not a fan of cooked wild duck. I eat it no doubt but not something I eagerly look forward to. Tried lots of recipes over the years and was given one yesterday that I tried today. It was so good I look forward to the next time cooked duck is on the menu.

I took a mallard I shot yesterday and cut the breast into bite sized chunks. Bought a jar of sliced jalapeños (choose your own heat level). I strained out the juice a reserving it and then marinated the breasts in this for about 2 hours. Took out the breasts and wrapped them in bacon. Threw them on the grill and mopped them with teriyaki sauce during the cook. Cooked them to medium rare/medium and took them off the grill. No heat from the jalapeños but seemed to remove much of the game taste.

Had one more as well

Marinated the breasts for 3 hours in a mixture of Lawry's Herb and Garlic marinade, soy sauce, Worchestshire and Emeril's essence seasoning. Removed and smoked over applewood until done. Not as good as the first recipe but both worked for me.

Very similar to our favorite recipe.

Likewise, I cut the breasts in thumb sized pieces, roll them in McCormick ' Cajun Seasoning, wrap with enough bacon to cover and hold in place with a toothpick, then grill on a pre-heated grill until the bacon is crispy, but the meat is only medium rare at best. (Be sure to pay attention. Bacon grease fires can ruin the whole batch. If I watch, it's never been a problem).

They never make it to the table!

Sounds good! When I was in Manitoba last month, my guide showed me a new to me trick for stuffed breasts. Butterfly a breast and lay down creamed horseradish and a piece of pepper jack cheese. Wrap in bacon and cook over the grill. The combo of the horseradish and duck is AMAZING!
 
Here is a super easy one for you.
Crush some saltine crackers very fine.
Add 50% Kraft grated parmesan cheese, to 50% of the crushed cracker crumbs.
Cut waterfowl into bite size pieces.
Dip pieces in egg/milk mixture.
Coat in cracker/cheese mix.
Fry in oil at medium high heat.
Don
t over cook.
Don't add any other spices.
These are just like eating popcorn, ya just can
t stop............


This recipe is awesome with abalone too..........

That's my favorite recipe, but I then drizzle honey overtop of them when I take them off the grill. Try that once, you can't beat it!
