Teal Breast Treat

We were fortunate at the club with a very productive teal season. I was able to hunt more than usual so had a lot of meat to eat and I like to eat it as fresh as much as possible. I needed to try something a little different and this turned out to meet with complete approval.

I would marinade the fresh breasts in soy sauce from the morning hunt until 4-5 pm. Then would grill them medium rare with a slice of pepperjack cheese. I grilled thin slices of french bread placing a breast with melted cheese on each slice. Then a Bread and Butter Chip pickle covered with either Yum Yum sauce or Peach, Mango, Habanero Sauce. They never lasted more than 10-15 minutes.

This may well be a published recipe and is certainly similar to "poppers", I just throw it out to those who haven't tried it as a great appetizer and an easy quick way to enjoy your ducks.
 
Sounds good.

Add some acid (citrus or vinegar) and something with sugar to the soy sauce for a little different flavor.

I like soy, lime, garlic and maple syrup; soy, vinegar, garlic and molasses; soy, lemon juice and pineapple; soy, orange juice and peach jam.

Mix, match, and vary as needed, but basic ingredients are soy, something acid, and something sweet. Garlic and hot stuff can be added for those who like them.

Keep the family guessing about the flavor until they take the first bite!

Especially with "fishy" ducks, the acid makes a difference.
 
You are absolutely correct about sweet with soy. That is why the Peach and mango suace was favored over the Yum Yum. Thanks for pointing that out.
 
Teal and Wood Ducks are the only ducks that I pluck, and enjoy every morsel of. For me they are like Quail (the best eating bird God put on earth). I have also been known to pluck doves , stuff with a small piece of Italian sausage and then roast. Good food, good friends and good wine. Life IS Good. Glad you had a good day, and enjoyed the taste of your hunt, congratulations.
 
I love to pluck teal and deep fry them. You can throw 10 teal in the turkey fryer for 10 minutes and they come out juicey and tender.
