I hunt Deer as well, started in high school with a bow.
Hunt with Bow, Pistol and Rifle in that order of preference.
Nothing better than a day in the woods.
But bird hunting always beats Deer hunting, larger bag limit and more time in the woods.

I had restored and hauled a cab over on my last 1/2 ton truck. It does take on a high center of gravity and the front brakes suffer. I went thru several sets of disc's, the high heat from increased load warps them.

I am using a small kayak to do everything, it works but is not comfortable.
A purpose built boat is much better at meeting your needs and provides a more enjoyable experience.
I would keep it and enjoy it regardless how often it gets used.

Build the boat you desire, it will keep you motivated, I would go for the strip built myself.
The experience you may lack will be learned, think twice before you act and it will be easier than you think, but will take twice as long too.

The outboard motor RPM is gear reduced to turn the prop at a slower speed and gain torque.
Gear reduction increases the prop shaft torque allowing a greater load (bigger prop).
A big prop turning slow is more efficient than a little prop turning fast.
